Ingredients: 2 Small Sweet Potatoes 1 T Olive Oil Dash of Salt & Pepper 1 Bell Pepper, chopped ½ Red Onion, diced 2 Large Grilled Chicken Breasts, chopped 1 can Green Chilies 1 T Garlic, minced ¼ tsp Paprika 1/8 tsp Cumin ¼ tsp Black Pepper ¼ tsp Cayenne Romaine Lettuce, chopped Tomatoes, chopped
Directions: Pre-heat oven to broil and line baking sheet with aluminum foil. Placed thinly sliced sweet potatoes on baking sheet and sprinkle with olive oil. Season with salt and pepper and bake for 15 minutes.
While sweet potatoes are cooking, warm olive oil in a pan over medium heat on the stove. Put bell pepper and onion in the pan to sauté for 3 minutes.
Transfer to a separate bowl. In the same sauté pan, add grilled chicken, green chilies, and garlic. Sprinkle in the paprika, cumin, pepper, and cayenne. Stir together until all ingredients are combined thoroughly.
Assemble nachos starting with sweet potatoes, layered with chopped lettuce, cooked peppers and onions, chicken and tomatoes. *Optional: top with guacamole or sour cream and salsa mixture.
