We're so excited about the salad we're making, 
we're assuming you'll want the recipe, so here you are!

Eat a Rainbow Spring Slaw
8 Servings
Ingredients for salad:
  • 1/2 head Napa cabbage, sliced thinly
  • 3 medium beets, peeled and shredded
  • 3 carrots, peeled and shredded
  • 2 stalks celery, sliced thinly
  • 2 green onions, sliced thinly
  • 1 tart red apple, unpeeled, sliced thinly or shredded
Ingredients for dressing:
  • 3 limes--zest one and juice all
  • ½ cup olive oil or safflower oil
  • ½ teaspoon cayenne pepper
  • 1 tsp agave nectar (optional)
  • Freshly ground pepper and kosher salt to taste




Method:
  1. Slice and shred vegetables and apple. Place in large bowl and toss lightly.
  2. Make dressing by mixing lime juice, zest, oil, cayenne pepper, agave nectar if desired, pepper and salt. Whisk till well blended.
  3. Toss slaw mixture with dressing. Chill and serve.
Optional: Add ½ cup sunflower seeds for extra crunch if desired.
