Oven Roasted Asaragus

Spring is on its way--are you ready for warmer temperatures, sunshine and more time outside?

I am, and hope you are ready for adventures and all the events of Spring: more daylight, Easter, Spring Break to name a few. Here’s a dish to make you smile--it is full of good things, low in calories and pretty as a picture. Make it for yourself, your family or have a dinner party that makes you and your guests feel good and healthy.

This recipe features that marvelous spring time vegetable--asparagus! Buy it now when it's tender and delicious--full of Vitamin C and a super good source of fiber.  It’s a great dish to accompany a festive meal and it’s great cold the next day for lunch.

Ingredients:
  • 1 bunch thin asparagus spears, trimmed
  • 2 tablespoons olive oil
  • 1 ½ tablespoons grated Parmesan cheese
  • 1 clove garlic, minced
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground black pepper
  • 1 tablespoon lemon juice
Directions:
  • Preheat oven to 425 degrees. 
  • Place asparagus into a bowl and drizzle with olive oil, tossing to coat.
  • Sprinkle with Parmesan cheese, garlic, salt and pepper.
  • Arrange asparagus onto a baking sheet in a single layer.
  • Bake until just tender, about 12 to 15 minutes. 
  • Sprinkle with lemon juice just before serving.
